Red Rice
Chamorro-style red rice is the usual white-grain rice with added seasonings. The iconic color and unique flavor of red rice come from the addition of annatto powder, derived from the locally known seed called “achiote.”

Kelaguen
This popular side dish is based on the cooking properties of lemon juice. It combines lemon juice, onions, local hot peppers, salt, and occasionally grated coconut to make “kelaguen,” either seafood, beef, chicken, or SPAM.

You’ll find that barbeque is a huge part of the island’s culture—not just because the food is delicious but also because it fosters a sense of togetherness.

Kadon Pika
Kadon Pika translates to “spicy stew.” Similarly to stew, there’s plenty of (delicious) versions of this favorite comfort food, but it is common to see it made with chicken and served on top of warm rice.

Coconut Candy
Coconut candy is truly a timeless favorite. It was enjoyed by ancient Chamorros and is still enjoyed to this day! It is a simple combination of just two ingredients—freshly grated coconut and sugar. The sugar is melted, and the shredded coconut is added once the melted sugar reaches the correct consistency. Very simple, but very delicious!

Kådu
Kådu translates from the Chamorro language to “broth” or “soup” in English. And just like soup, there are many variations of this go-to comfort food. Although the island’s weather stays generally warm, it’s rare for anyone to turn down a bowl of Kådu in Guam!

Tamales Gisu
Tamales Gisu are essentially the Chamorro version of tamales made with corn meal, corn flour, and spices. What makes Tamales Gisu special is that each side has a different flavor! One side has annatto powder and chili peppers, while the other side does not.

Latiya
This beloved traditional dessert is a layer of custard and cinnamon on top of a moist cake—the perfect way to satisfy any sweet tooth!

Fina’denne’
Fina’denne’ is one of those dishes that is made a little bit differently from person to person, but it’s rare to come across a recipe that isn’t mouth-wateringly delicious. It’s a favorite in Guamanian cuisine and is used as a soy sauce-based condiment combining vinegar, lemon juice, and chopped onions. It’s common to enjoy fina’denne’ with meat and rice!
